Mini Quesadillas


Ingredients:

  • Whole wheat tortillas
  • Shredded cheese (cheddar or Mexican blend)
  • Black beans, rinsed and drained
  • Salsa (optional)

Instructions:

  1. Sprinkle shredded cheese on half of a tortilla.
  2. Add black beans and salsa if desired.
  3. Fold tortilla in half and press gently.
  4. Heat in a skillet until cheese melts and tortilla is crispy.
  5. Slice into wedges.
