Banana Oatmeal Pancakes


These banana oatmeal pancakes are made with wholesome ingredients and are naturally sweetened with ripe bananas, making them a nutritious and kid-friendly breakfast option.

Ingredients:

  • 1 ripe banana, mashed
  • 1/2 cup old-fashioned rolled oats
  • 1/4 cup milk (cow’s milk, almond milk, or any other milk alternative)
  • 1 large egg
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/4 teaspoon vanilla extract (optional)
  • Olive oil or butter for cooking

Instructions:

  1. In a mixing bowl, combine the mashed banana, rolled oats, milk, egg, cinnamon, and vanilla extract (if using). Stir until well combined.
  2. Heat a non-stick skillet or griddle over medium heat and lightly grease with olive oil or butter.
  3. Pour about 1/4 cup of the pancake batter onto the skillet for each pancake. Use the back of a spoon to spread the batter into a circle.
  4. Cook the pancakes for 2-3 minutes on each side, or until golden brown and cooked through.
  5. Repeat with the remaining batter, adding more oil or butter to the skillet as needed.
  6. Serve the banana oatmeal pancakes warm, topped with sliced fruit, yogurt, or a drizzle of maple syrup if desired.
