Vegetable Poha (Flattened Rice)


Ingredients:

  • 1 cup poha (flattened rice)
  • 1 tablespoon oil
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • 1 small onion, finely chopped
  • 1/4 cup peas (fresh or frozen)
  • 1/4 teaspoon turmeric powder
  • Salt to taste
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh coriander (cilantro)
  • 2 tablespoons roasted peanuts (optional)

Instructions:

  1. Prepare the Poha:
    • Rinse the poha in a strainer under running water until it becomes soft. Drain completely and set aside.
  2. Cook the Vegetables:
    • Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds. When they start to splutter, add the chopped onion. Sauté until the onion turns translucent.
    • Add peas and cook for another 2 minutes.
  3. Combine and Cook:
    • Add turmeric powder and salt to the vegetable mixture. Stir well.
    • Add the drained poha and mix gently to combine all ingredients. Cook for 2-3 minutes until the poha is heated through.
  4. Finish and Serve:
    • Turn off the heat. Add lemon juice and chopped coriander. Mix gently.
    • Garnish with roasted peanuts if desired.
    • Serve warm.
