Ingredients:
- 2 cups cooked pasta (any shape)
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/2 cup shredded carrots
- 1/4 cup sliced black olives
- 1/4 cup cubed cheddar cheese
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
- 1 tbsp chopped fresh basil (optional)
Instructions:
- Cook the Pasta: Cook the pasta according to the package instructions. Drain and rinse under cold water to cool.
- Prepare the Veggies: While the pasta is cooking, prep the cherry tomatoes, cucumber, shredded carrots, black olives, and cheddar cheese.
- Mix the Salad: In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, shredded carrots, black olives, and cubed cheddar cheese.
- Dress the Salad: In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour over the pasta salad and toss to coat evenly.
- Serve: Garnish with chopped fresh basil if desired. Serve immediately or refrigerate until ready to eat.
