Mini Veggie Frittatas


These mini frittatas are packed with vegetables and protein, making them a nutritious and delicious meal or snack for toddlers.

Ingredients:

  • 6 large eggs
  • 1/4 cup milk (you can use cow’s milk or a dairy-free alternative)
  • 1/2 cup finely chopped vegetables (such as bell peppers, spinach, tomatoes, and broccoli)
  • 1/4 cup grated cheese (cheddar, mozzarella, or your toddler’s favorite cheese)
  • Salt and pepper to taste
  • Olive oil or cooking spray for greasing the muffin tin

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin with olive oil or cooking spray.
  2. In a mixing bowl, whisk together the eggs and milk until well combined. Season with salt and pepper to taste.
  3. Stir in the chopped vegetables and grated cheese until evenly distributed.
  4. Pour the egg mixture into the prepared muffin tin, filling each cup about 2/3 full.
  5. Bake in the preheated oven for 15-20 minutes, or until the frittatas are set and lightly golden on top.
  6. Allow the mini frittatas to cool slightly before serving. They can be enjoyed warm or at room temperature.
