Mini Pancakes


Ingredients:

  • 1 cup all-purpose flour/ Oat Flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk (or 1 cup milk + 1 tablespoon vinegar or lemon juice)
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 1/2 teaspoon vanilla extract
  • Butter or oil for cooking

Optional Toppings:

  • Maple syrup
  • Fresh fruits (such as berries or banana slices)
  • Nutella or peanut butter

Instructions:

  • In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • In another bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients. Stir until just combined. It’s okay if there are some lumps; do not overmix.
  • Heat a non-stick griddle or skillet over medium heat. Lightly grease the surface with butter or oil.
  • Spoon about 1 tablespoon of batter for each mini pancake onto the griddle. You can make them slightly larger if preferred.
  • Cook for about 1-2 minutes, or until bubbles form on the surface and the edges look set.
  • Carefully flip the pancakes with a spatula and cook for another 1-2 minutes, or until golden brown and cooked through.
  • Transfer cooked pancakes to a plate and cover with a clean kitchen towel to keep warm. Repeat with the remaining batter, greasing the griddle as needed.
  • Let the mini pancakes cool completely before packing them into a lunch box. This prevents them from becoming soggy.
