Ingredients:
- 1 cup poha (flattened rice)
- 1 tablespoon oil
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- 1 small onion, finely chopped
- 1/4 cup peas (fresh or frozen)
- 1/4 teaspoon turmeric powder
- Salt to taste
- 1 tablespoon lemon juice
- 1 tablespoon chopped fresh coriander (cilantro)
- 2 tablespoons roasted peanuts (optional)
Instructions:
- Prepare the Poha:
- Rinse the poha in a strainer under running water until it becomes soft. Drain completely and set aside.
- Cook the Vegetables:
- Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds. When they start to splutter, add the chopped onion. Sauté until the onion turns translucent.
- Add peas and cook for another 2 minutes.
- Combine and Cook:
- Add turmeric powder and salt to the vegetable mixture. Stir well.
- Add the drained poha and mix gently to combine all ingredients. Cook for 2-3 minutes until the poha is heated through.
- Finish and Serve:
- Turn off the heat. Add lemon juice and chopped coriander. Mix gently.
- Garnish with roasted peanuts if desired.
- Serve warm.
