Veggie Pasta Salad


Ingredients:

  • 2 cups cooked pasta (any shape)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/2 cup shredded carrots
  • 1/4 cup sliced black olives
  • 1/4 cup cubed cheddar cheese
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • 1 tbsp chopped fresh basil (optional)

Instructions:

  1. Cook the Pasta: Cook the pasta according to the package instructions. Drain and rinse under cold water to cool.
  2. Prepare the Veggies: While the pasta is cooking, prep the cherry tomatoes, cucumber, shredded carrots, black olives, and cheddar cheese.
  3. Mix the Salad: In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, shredded carrots, black olives, and cubed cheddar cheese.
  4. Dress the Salad: In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour over the pasta salad and toss to coat evenly.
  5. Serve: Garnish with chopped fresh basil if desired. Serve immediately or refrigerate until ready to eat.
