Turkey and Veggie Pinwheels


Ingredients:

  • 4 whole wheat tortillas
  • 4 oz of cream cheese, softened
  • 1 cup shredded lettuce
  • 1 cup shredded carrots
  • 1 cup thinly sliced cucumber
  • 8 slices of turkey breast
  • 1/2 cup shredded cheddar cheese

Instructions:

  1. Prepare the Tortillas: Lay out the whole wheat tortillas on a clean surface.
  2. Spread the Cream Cheese: Evenly spread a thin layer of softened cream cheese on each tortilla. This will help the other ingredients stick and add a creamy texture.
  3. Add the Veggies: Sprinkle the shredded lettuce, shredded carrots, and thinly sliced cucumber evenly over the cream cheese layer on each tortilla.
  4. Layer the Turkey: Place two slices of turkey breast on top of the veggies on each tortilla.
  5. Add the Cheese: Sprinkle a small amount of shredded cheddar cheese on top of the turkey slices.
  6. Roll Up the Tortillas: Carefully roll up each tortilla tightly to form a log shape. Make sure to roll them as tightly as possible to keep all the ingredients together.
  7. Slice into Pinwheels: Using a sharp knife, cut each rolled tortilla into 1-inch slices to form pinwheels. You should get about 5-6 pinwheels per tortilla.
  8. Serve: Arrange the pinwheels on a plate and serve immediately, or pack them in a lunchbox for a tasty, kid-friendly lunch.
